1 onion, chopped
4 slices bacon, chopped
2 c mashed potatoes (like to add cheese to ours)
1/2 c flour
1 egg, beaten
Cook onion and bacon until bacon is crisp and onion is tender. Drain reserving 1 TBSP of the drippings in the skillet.
Mixed mashed potatoes, flour, egg and onion and bacon mixture. Heat bacon drippings in same skillet. Spoon 1/4 c of teh potato mixture into skillet; smooth with back of spoon to create 3-inch patty. Cook 2 minutes on each side or until crisp and golden brown on both sides. Makes 4 servings; 3 pancakes each.
